This easy delicious Halibut dish is a perfect healthy meal for two easily double to serve friends. The flavors of roasted tomatoes, shallots and peppers compliment the fish and stand up and pair wonderfully with the 2019 Laurel Glen Vineyard Estate Cabernet Sauvignon.
Serves 2
INGREDIENTS
1-pint cherry tomatoes
2 shallots, 1 minced, 1 sliced
5 cloves garlic minced
1 red bell peppers sliced thinly
1 small zucchini, sliced
1 pound halibut, 2 fillet pieces
1 Tb Olive oil
Salt pepper
1 Tablespoon capers
1 teaspoon salt
1 teaspoon black pepper
4 Tablespoons olive oil
3 Tablespoons Cabernet Sauvignon
Chopped fresh basil
Preheat the oven to 400 F
Toss the cherry tomatoes, sliced peppers, shallots, zucchini, and minced garlic in a bowl.
Whisk together the capers, salt, pepper, olive oil, and wine. Toss with the vegetables. Let sit and marinade for 15 minutes at room temperature.
Pour vegetable mixture into a large cast iron skillet or braiser and bake for 20 minutes. Stir halfway thru, bake until the tomatoes easily pop when pressed.
Dry the Halibut fillets, drizzle with olive oil and sprinkle with salt and pepper.
Gently nestle the Halibut pieces into the vegetables and return to the oven. Cook for about 10 minutes (depending on how thick the fillets are) until the fish flakes.
Garnish with basil and serve with salad and bread or over your favorite pasta.
