Grilled Pound Cake by @shaunmyrick

For those summer celebrations, sometimes store-bought is exactly where it’s at! Take a simple store-bought pound cake to the next level by grilling each slice and serving it with fresh berries and a dollop of whipped cream. Pair it with a chilled glass of Laurel Glen Sparkling Brut Rosé for an easy, elegant dessert that’s perfect for celebrating all season long.
Ingredients:
- Store bought Pound cake (or your favorite homemade)
- Nonstick cooking spray for grill
- 2 pounds fresh Strawberries
- 1 tablespoon white sugar
- 1-pint fresh blueberries
- 1 cup heavy whipping cream
- 2 tablespoons white sugar
- 1/2 teaspoon vanilla
- Mint leaves for garnish
Prep:
- Clean and slice the strawberries, toss with the sugar, mix in the blueberries, set aside till ready.
- Slice the pound cake into ¾ / 1-inch-thick slices.
- Heat your grill or grill pan to medium/medium high heat, spray with nonstick spray.
- Place the pound cake slices on the grill. Grill for 3-5 minutes per side, until toasted and nice caramelized grill marks appear.
- Make the whipped cream. Pour heavy whipping cream, sugar and vanilla into the cold bowl and whisk on high speed until medium to stiff peaks form, about 1 minute. If you over beat just add more cold cream.
Assemble:
Plate the grilled pound cake and top with the berry mixture and a dollop of the whipped cream, garnish with a sprig of mint.
Serve along with a chilled glass of Laurel Glen Sparkling Brut Rosé.
